Classic Limeñan Dessert

Suspiro a la Limeña is a classic Limeñan dessert. The bottom layer is made of manjar blanco, a sweat, caramel like, sticky reduction of milk and sugar, and egg yolks which is covered by a huge portion of meringue.

Translated meaning "sigh of the lady from Lima", Suspiro Limeño first appeared in the Peruvian capital in the mid-19th century. Till today, this heavenly dessert is beloved mainly in Lima and restaurants in Peru and Peruvian restaurants abroad.
